fix DB size estimates for light client data (#6373)
Addresses two inaccuracies in light client data size documentation: 1. `SyncCommittee` pubkeys serialize are 48 bytes not 64 bytes 2. Some of the estimates used 1000 vs 1024 bytes/KB, aligned to 1024
