docs: Fix broken URLs in Helm docs

- Fix anchors for client.extraEnvironmentVars and
server.extraEnvironmentVars.
- Change extraEnvironmentVars data type to `map`.
- Fix external link to kubernetes.io under
connectInject.namespaceSelector.
